With summer just around the corner, it is time to push our healthy eating habits into high gear!! The hubby & I have decided that we need to add more salads into our week which makes me nervous.. I like big dinners?! We don't really eat terribly but with the summer bbqs ahead and the ice cream trucks singing my name... We will work hard to eat healthier so we can have special treats without feeling too guilty! So last night I went to make dinner and looked in the fridge saying - oh boy - a boring salad?! But.. I spiced it up adding roasted corn (off the cob) cubed avocados and lots of brightly colored peppers! We had a choice of two healthy dressings - Pomegranate Blueberry vinegarette and Lemon Poppy lite.We really enjoyed this salad and we both felt pleasantly stuffed after din-din!!
